Inasmuch as milk is a highly nutritious food with a potential for providing much needed protein to disadvantaged populations, domestically and internationally, it is important to seek solutions whereby lactose intolerant individuals could both consume milk without symptoms and utilize its nutrients without interference and loss. While it is apparent that lactose intolerant populations are heterogeneous with respect to their milk drinking habits (1 -4), with many experiencing little or no symptoms with the consumption of commonly consumed amounts of milk (5-6), it is doubtful that all nutrients contained therein are being satisfactorily utilized (7). Obvious controversy exists as to the precise inferences to be drawn from the experimental data on the clinical consequences of lactose intolerance, yet many agree that viable options should be considered for approaching this prevalent condition (8).
